As in the homeland of pizza, in Naples, we use only flour, water, salt and yeast to prepare the dough. Only the best ingredients are taken for the filling: farm cheeses, ham, pepperoni, Italian tomatoes without preservatives and dyes, organic fruits, vegetables, mushrooms.Pizzaiolo does not use a dough-rolling machine, but manually shapes the base for the filling, so as not to disrupt the structure of the dough and shift carbon dioxide from the center to the edge. The edge when baking turns out to be airy and soft.We honor traditions and use a wood-burning stove and a live fire to prepare our pizza. In the oven at high temperature, the dough is baked quickly, and the filling remains as juicy as possible.
